Banana Bread Oatmeal

First off, I took the photo above in April of 2020, divorced and alone in a dilapidated apartment in Austin about a month after the world shut down. If it bears some resemblance to Tom Hanks' volleyball buddy, Mr. Wilson, I was in a similar state of mind. I named him Oatmealio Estevez. He had appeared in The Breakfast Club after all. After a good chuckle, I took his portrait with my iPhone and then I ate his face.

I can't draw a totally straight line between the story of that photo and this recipe. But you lived through those dark days, and know that reason is for chumps, chodes, and schmoes. Anyway, Happy New Year! Let's make some oatmeal!!!

If you don't like oatmeal and have only had the stuff that comes in packets that you pour boiling water over, please try this version before condemning the humble oat. I prefer steel cut oats vs rolled oats because they have more texture, but I'm sure any type of oats will work for this recipe if you add all the ingredients and cook according to the instructions and with the correct amount of liquid for that type. I use the Instant Pot because I don't have to worry about it burning on the bottom of the pan or boiling over, but the stovetop should work fine if you pay attention.

I usually make double the amount and eat the leftovers all week, but always need to add extra milk when reheating.

Banana Bread Oatmeal

Ingredients

  • 1-2 ripe bananas
  • 1 cup steel cut oats
  • 1 cup milk (cow, oat, soy, etc.)
  • 1 1/2 cups water
  • 2 Tbsp molasses
  • 1 1/2 tsp pumpkin pie spice or cinnamon
  • Pinch of salt
  • For serving: Brown sugar, butter, fresh banana slices, toasted walnuts or pecans

Instructions

  1. Cut the banana into about 1 inch slices. I tried this with whole bananas and the strings got weird.
  2. Place all ingredients in the Instant Pot.
  3. Seal the lid and set to High Pressure for 4 minutes.
  4. Wait until the pressure naturally releases. Don't try to rush it with a quick release. It needs all the time to soak up the liquid.
  5. Serve with your preferred combination of toppings.
